The vineyard and the processing - Spurred cordon vines.
The vineyard faces south-west, the soil is clayey tending towards limestone.
Harvest by hand.
Vinification: the grapes are destemmed and pressed. Spontaneous fermentation, in white i.e. without the skins, lasted 20 days at a temperature of 22°, followed by two rackings before bottling.
Organoleptic notes
Coral red color with iridescent copper and cherry reflections. Beautiful.
Fragrant nose that reveals itself with progressive intensity with a fresh bouquet of very floral tones with the scents of rose and iris, enriched by notes of red plum and rhubarb.
In the mouth the calm acidity is the persistent strength of a gustatory development of a passista that proceeds in an irresistible progression and closes with a saline finish, very satisfying with the delicate and clean returns of flowers.
Like many rosé wines it has an elective affinity for vegetarian cuisine and performs admirably on crispy fried fish.
Today, talking about organic farming, natural products, biodynamics seems almost a fashion. These are ideas that Aurora has always practiced.
