Harvest: Early October, hand-picked.
Vinification: Soft pressing, fermentation in stainless steel at a controlled temperature of 26/28°C, managed with pumping over and delestage, long maceration on the skins, use of native yeasts, aging in barriques.
Tasting notes:
Ruby red with remarkable consistency.
On the nose, it's intense and decidedly persistent, with notable hints of black cherry syrup, blackberries, and plums, thus fruity, but also spicy with subtle pepper, cinnamon, and tobacco, which shows signs of ageing.
On the palate, it's warm, appropriately fresh, and tannic, with already mature and soft tannins, present yet balanced, with good flavor and body.
It offers a sensation of balance that's more persistent than intense, with more pronounced aftertaste of toasted notes like cocoa.
It pairs well with soups, fried foods, and roasted fish. It pairs well with all meals, especially with rich red meat and game dishes.
Since the 2020 harvest,
all our wines have been certified organic.
