Joy Lacrima di Morro d'Alba DOC - Contains sulphites.
Vineyards: Morro D'Alba - Altitude: 180 meters above sea level
Training system: Spurred cordon
Harvest: generally within the second half of September, bunches harvested by hand in small boxes
Vinification: With inoculation of selected S. Cervisiae yeasts, at a maximum temperature of 25°C with frequent delestage and pumping over to favor the extraction of the softest and most elegant tannins, racking and pressing of the separated marc.
Malo-lactic fermentation: Spontaneous and complete
Maturation: In steel tanks for five months and in large vitrified cement barrels for another five months
Aging: In bottle for approximately three months.
Organoleptic notes
Deep purple red color with mauve nuances
Delicate floral aromas of violet, geranium and rose petal with pleasant notes of black fruit
Soft on the palate, moderately tannic and velvety with a persistent finish
Pairing: Stuffed pasta, pasta with rabbit sauce, stuffed capon, mixed boiled meats, medium-aged pecorino cheeses.
