The San Nicolò vineyard, facing north-west, is located at an altitude of 160 meters above sea level. The exposure, the clay soil and the presence of sandstone in the subsoil give the wine unique characteristics. The moderate altitude and proximity to the sea then influence the microclimate of the area, favoring the optimal maturation of the grapes.
The vinification takes place with spontaneous fermentation at a controlled temperature, using indigenous yeasts, while the refinement involves a period of 7 months in cement on the yeasts followed by at least 9 months in the bottle.

It lends itself to versatile pairings, perfect both as an aperitif and as an accompaniment to fish dishes or fresh cheese platters.
Palombare, our first wine, coming from the Sasso di Serra San Quirico cru, obtained from an old vineyard which half was planted in 1955 and the remaining half was expanded in 1991 and which is cultivated under the organic conversion regime .
