Its longevity is guaranteed by an aging capacity in the cellar that can reach up to 3-4 years, during which it evolves elegantly, enriching its complexity and refinement
The vineyard, planted in 1984, is located in San Michele in the municipality of Cupramontana, between 290 and 320 meters above sea level.
The vineyard has a north-east exposure and directly overlooks the Adriatic Sea, which on clear days is clearly visible and conditions the local microclimate of a purely Mediterranean nature, with high maximum temperatures but also good temperature range and constant ventilation.
The soil is of medium texture with a prevalence of clay and limestone and rests on a subsoil of marl and sandstone. The vineyard is in the process of converting to organic.
After the harvest, a whole bunch pressing is carried out followed by static decantation and fermentation with indigenous yeasts.
Both the fermentation and the subsequent refinement are carried out in cement tanks.

The nose opens with intense floral and herbaceous notes, with hints of elderberry and cobbled grass, which intertwine with nuances of almond and lemon, enriched by mineral hints.
In the mouth, it manifests itself with a pleasant flavor, freshness and a moderate creaminess and body, which make it extremely balanced and versatile.

It is a perfect wine to be enjoyed alone, perhaps as an aperitif, but which also pairs splendidly with fish-based dishes, fresh cheeses and light first courses.
Palombare, our first wine, coming from the Sasso di Serra San Quirico cru, obtained from an old vineyard which half was planted in 1955 and the remaining half was expanded in 1991 and which is cultivated under the organic conversion regime .
