Vernaccia di Serrapetrona a DOCG dry red sparkling wine, which contains the essence of a unique method of its kind.
Three fermentations are necessary, with 60% of the grapes left to dry in rooms with natural ventilation for three months, before obtaining a bottle that enhances the primary aromas typical of the vine like few others.

Winemaking: it is very particular, it involves three fermentations and subsequent refermentations, a part of the grapes is vinified at the time of the harvest, the remaining 60% is subjected to light drying in suitable rooms or through the use of ventilation systems.
By mid-January the grapes are pressed and at the end of the month the last phase begins, which consists of combining the must obtained from the dried grapes with the base wine.
In the third and final fermentation the wine thus obtained is subjected to sparkling through natural fermentation.

Organoleptic characteristics
Vibrant ruby red color.
Rich, persistent, very joyful perlage.
Very full-bodied in the mouth, savoury, round to sweet, soft and long, with a pleasantly bitterish aftertaste.
Pairings: Tart with red fruit jam, dry pastries, panettone.
Uncork the bottle at the moment, taking care to tilt it slightly forward.
