The 2021 harvest began on Tuesday, August 17th, and we were able to observe grapes with excellent analytical balance and better decide on their destination.

In accordance with the Ca' del Bosco Method, the grapes, hand-picked in small crates, are promptly coded and cooled in cold storage.
A special washing and hydromassage system for the bunches, using three soaking tanks and a complete drying system.
Only the best must from the first fraction gives rise to this wine, approximately 1/4 of which is vinified in small oak barrels used the previous year for Chardonnay. The remaining portion is vinified in steel vats.
The two fractions, after 8 months of aging on their lees, without malolactic fermentation, are blended; the wine is then bottled naturally by gravity.
Thanks to innovative "long-tube" taps, the wine rises from the bottom of the bottle without lamination, without shaking, and does not suffer any oxidative shock. No sulfites are added at this stage, guaranteeing integrity and wholesomeness.
Finally, each bottle is uniquely marked to ensure traceability.
Bottling June 2022. Aged in bottle for a minimum of 5 months.
Analytical data at bottling: Alcohol 13.00% Vol.; pH 3.12; Total acidity 6.18 grams/liter; Volatile acidity 0.20 grams/liter.
