The hand-harvested grapes are left to dry in hillside drying rooms until January. They are then pressed and processed using the traditional red winemaking method, with prolonged maceration for 20-25 days. Once completed, the wine is racked and transferred to oak barrels for two years.
After this period, it is bottled and aged in the bottle for several months.
