Harvest: Early October, hand-picked.
Vinification: Soft pressing, fermentation in stainless steel at a controlled temperature of 26-28°C, managed with pumping over and delestage, maceration on the skins for 20-21 days.
Tasting Notes:
It is a full-bodied, bright ruby red with purple highlights.
It dances gracefully in the glass, leaving rather dense and close-knit arches, a sign of its good alcohol content.
The aromas are reminiscent of ripe blackberry, mulberry, undergrowth, sour cherries, and maraschino. Upon opening, cocoa, tobacco, and oregano emerge, and the fruit takes on notes of alcohol.
The palate reveals a clearly evident astringency, which finds an excellent balance with the alcohol and smoothness, as well as an excellent correspondence with the aromas already perceived on the nose, particularly black cherry and plum.
Pairing: Rich red meats, mature cheeses.

This is the culmination of long and painstaking work in the vineyard and cellar, achieving a remarkable result.
