Organic Cacio Sopravvissano is a traditional artisanal pecorino made from freshly milked raw sheep's milk and enriched with the aromatic essences of mountain pastures.

 

On his family farm, Marco Scolastici raises primarily Sopravvisana sheep, a cross between Vissana sheep and Merino rams.

 

These cheeses are produced in the Sibillini Mountains, protected by a Slow Food Presidium with the aim of reuniting the few remaining producers.

Ingredients: Pasteurized sheep's milk, natural rennet, salt.

A semi-aged pecorino, aged for at least sixty days, thanks to the air, the environment, and the oxygenation of the place, in the most natural way possible.

Carefully refined, it offers a full, intense, harmonious, and slightly savory flavor.

It pairs perfectly with structured white wines and smooth reds.

Excellent with an elegant Verdicchio di Matelica DOC, an aromatic Pecorino DOC or a balanced Pinot Noir, which enhance its authentic notes and aromatic persistence.
