Sapa Caonà is a traditional peasant product obtained from grape juice that is expertly concentrated by slow boiling over direct heat in a copper pot. From 100 kg of grapes, no more than 20 liters of Sapa are obtained.
Sapa Caonà is a non-alcoholic product, without added colorants and preservatives, naturally gluten-free and free of all other allergens, very rich in antioxidants and mineral salts.
It has a beautiful caramel color and a syrupy consistency.
The flavor is unmistakable and very pleasant due to the balanced contrast of the sweetness and acidity of the grapes from which it derives.
The prevailing olfactory scents are those of caramel and cooked fruit.
Sapa in popular use is used both as an ingredient in typical desserts of the Macerata area such as cavallucci, tarts and ciambelloni, but also as a condiment on polenta.
Today, it is used in many different ways. It is recommended combined with aged and tasty cheeses. It is excellent as a salad dressing, together with vinegar. Perfect in a hot sauce with berries to garnish cream ice cream and fiordilatte. It can be used to prepare thirst-quenching drinks, granitas and sorbets.
In hot milk it is an excellent remedy against sore throats and colds. In a chamomile infusion it helps you sleep and is a good relaxant.
It can also be eaten alone, as a tonic, antioxidant, mineral salt supplement and to reduce heartburn.
Finally, sapa is also used in dermocosmetics for the preparation of nourishing masks for the skin of the face.
