A wine produced with LOVE, SOUL and LOGIC.
It is an organic Verdicchio di Matelica doc in which sulphites have NEVER been added (sulfur dioxide, metabisulphite, ...) but which has been produced with highly innovative viticultural and oenological techniques:

The school of Precision Viticulture was carried out in the vineyard, already organically run; in part the copper (heavy metal that can be accumulated in the soil) has been replaced in the antifungal function with Chitosan (natural product extracted from mushrooms and crabs);

The grapes were washed with Ozone: this resulted in a perfect microbiological cleaning of the marc and therefore of the must; below the selected yeasts that have fermented, have found an absolutely hospitable environment and have produced in the fermentative biochemism a very low amount of sulfur of natural origin (less than 6 mg / l against an average natural production of 20 - 25 mg / l)

White wine without sulphites - Verdicchio, a matelicese clone with a tight cluster

Grapes in organic cultivation and partially in the absence of copper (replaced with chitosan)

Position: hilly with southern exposure, altitude 420 meters above sea level.
Soil: loose

Gems / strain load: 10 (the first 4 are sterile)

Harvest: 5 and 8 October 2019 with manual harvesting in 200 kg bins.

Vinification: sanitizing of the grapes in a refrigerated cell with ozone washing and cooling of the grapes at 0 ° C; after 36 hours in the cold room cryomaceration in the press for 6 hours; natural cold clarification; inoculation of natural yeast selected for the very low production of sulfur in fermentation; fermentation temperature: 14- 16 ° C, d urate 25 days approx.

Tanks: 100 hl stainless steel, 9 months maturation in stainless steel tanks, must clarification. Malolactic fermentation not carried out.
