Fermentation takes place in concrete tanks. Here the wine ages on its lees for another 12 months.

Vineyard: Total extension 1,5 Hectares - Plant of 1972, average production 6 tons / hectare
Soil: clayey / calcareous; important is the saline component, high presence of calcium carbonate in the soil
Vinification: Manual harvest, soft pressing, static decanting of the must, fermentation exclusively in cement, aging in cement tanks for 12 months, bottling, aging for another 12 months in bottle.
