PICENUM Terre San Ginesio, an excellent “cooked wine for meditation”, a traditional product of the Marches celebrates the taste of cooked wine and brings it back to the prestige of the past.
Cooked wine has been for centuries one of the most prestigious drinks to be served on the table.
The practice of cooking the must to obtain cooked wine has remained the same over time, becoming an integral part of the Marche food and wine tradition.
Blend of several vintages of white and black berried grapes, native varieties.

The grapes come from our vineyards located in the municipality of San Ginesio.
The vineyards are located at an altitude between 300 and 400 meters above sea level on the hills around the Fiastrella valley.
The soil is of medium texture tending to clayey, deep and fertile.
Vinification and aging - The soft pressing-destemming is followed by the cooking of the must over a direct flame; with this procedure an average reduction equal to 1/3 of the initial volume of the must is obtained. After cooking, the must is placed in oak barrels where a long period of fermentation begins which continues, for years, with a further refinement on the lees and is finally bottled.
Organoleptic characteristics
Amber, golden and crystalline color;
the scent is complex and ranges from caramel to dates, from dried figs to honey;
in the mouth it is soft, warm, the sweetness is excellent, never cloying and perfectly integrated with freshness and flavor; the result is a balanced, persistent, fine and harmonious wine.
Pairings - Excellent with dry pastries, dark chocolate, roasted chestnuts, peaches, spicy or blue cheeses. However, it is also perfect on its own as it is an excellent "meditation wine".
