The dry SPARKLING wine Passerina, method Martinotti (charmat) has a straw yellow color with green reflections. On the nose white flower, anise, mint and lemon leaf. Sorso moderate but very satisfying.
Production area: Hills in the municipality of Jesi.
Soil: medium-calcareous Franco / clay.
Training system: Controspalliera with guyot pruning.
Plants per hectare: around 5,500.
Yield per plant: about 3 kg.
Vinification: White with application of the "reduction" technique. Once the alcoholic fermentation is complete, the wine is transferred to the autoclave:
