Harvest period : Last ten days of August for Verdicchio, first ten days of October for Montepulciano
Vinification and aging : Vinification based on sparkling wine for Verdicchio which after fermentation is assembled with Montepulciano. Red vinification for Montepulciano; the freshly picked ripe grapes are left to macerate in the tank for 24 hours cold and then fermented. Once ready, the rosé base is put in barrique for malolactic fermentation and maturation. After 6/7 months the draft is made and the subsequent aging for 36 months on the lees. At the end of this period we proceed with the disgorgement, the bottles rest for another 4 months in the cellar .
