Harvest The harvest period is generally in September. The grapes are collected in small containers and sent to the company where, after careful and further selection, the grapes are vinified at controlled temperatures. The characteristic of this vine is very particular: when the grape skin reaches the point of ripeness, it breaks, leaving the juice from the grape to drip, tear.

Fermentation After destemming, the grapes are conveyed into steel containers, with a capacity of approximately 100 hl each, equipped with pockets for temperature control, the main tool for obtaining quality wines. The maceration on the skins lasts for about 20 days, at a temperature of about 20 ° C, to keep the fruity and floral varietal aromas of these grapes to the maximum.
