Vinification: Rasping and crushing of the grapes, fermentation for 15 days in steel tanks with automatic pigiage at a controlled temperature of 24-26 ° C
Aging: 6 months in steel, 18 months in 25 hl oak barrels, further 6 months in bottle
Organoleptic characteristics
Intense ruby red color.
Initial notes of black cherry and elegant hints of undergrowth, in which strawberries and blueberries can be easily recognized. Fineness enhanced by final notes of mulberry and laurel.
The taste has a remarkable elegance. The mineral sensations typical of the area are combined with the unique hints of fruit and spices of the Vernaccia Nera, a vine that expresses the utmost peculiarity in this wine.
Pairings: The best combination is with grilled, also perfect with first courses with meat sauce, cold cuts and red meats, semi-aged cheeses such as scamorza, pecorino or Parmigiano Reggiano.
Serve in a large Ballon glass
The goal is to carry on with firm conviction the work of enhancing the indigenous grape variety, Vernaccia Nera and to preserve its traditional drying, still carried out in a natural way today.
The local winemaking methods have been combined with the experience of external technicians, both in the vineyard and in the cellar, aimed at a style of agriculture that is attentive and responsible towards the environment, collaborators and the local community.
