Vines trained with spurred cordon and Guyot
Soil: The vineyards are planted in the hills at about 150 meters above sea level, on a soil of medium clayey mixture, tending to limestone.
Harvest: hand-picked grapes separately.
Vinification : ferment with spontaneous yeasts for about 10 days. At the end of fermentation the marc is pressed and the wine is decanted naturally to separate it from the lees. Aging in oak barrels.
Tasting
Ruby red color, limpid.
Intense and quite persistent, fruity, with hints of plum and berries.
The taste is dry, quite fresh, warm, soft and rightly tannic.
Pairing: Young and fresh wine for the whole meal. It goes well with legume dishes, white meats, even baked blue fish.
Today, talking about organic farming, natural products, biodynamics seems almost a fashion. These are ideas that Aurora has always practiced.
