Vinification: In horizontal vats for 6 days in contact with the skins at 20 °. The fermentation ends in steel.
Aging: 12 months in small French oak barrels, at least 12 months in the bottle.
Organoleptic notes
Intense ruby red color.
Aromas of blackberry and undergrowth, black pepper, licorice, cloves, balsamic notes.
Structured on the palate, fruity and spicy, dry with soft tannins and persistent with a clean finish.
Serve with grilled meats, game, mature cheeses.
