Fior di noce Pecorino nostrano Vallesina, a cheese with a pleasant bitter aroma.

Wrapped in dried walnut leaves rehydrated by the fats of the refermentation, it is aged 60 days in wooden barrels.

Characteristics: soft texture, strong flavor, irregular shape
