Processing - The freshly picked and selected coffee cherries are quickly immersed in tanks full of water to eliminate those that remain afloat (rotten or less dense), and then immediately deprived of peel and pulp, to be left to ferment for 24 / 48 hours in tubs of water and finally washed through channels of pure running water. Once washed, the grain is left to dry to ideal humidity (10-12%) on nets suspended in the sun, the so-called African bed.
Roasting - You want to set an aggressive profile, you have to give it all you can to bring it to a level of roasting that is still very clear, in any case, and avoiding the risk of boiling it by taking it too far. And without losing those wildflowers and candied fruit, that would be a crime!
