Ciauscolo IGP soft spreadable salami, typical of the Marche region, produced by expert pork butchers, with artisan techniques handed down from generation to generation, especially in the area of the Marche Apennines.
The Ciauscolo IGP has a pinkish color, and to produce it it is used: pork, pork fat, salt, ground black pepper, wine and crushed garlic. Antioxidant E301. Preservative E252.
The dough obtained after two grinds is stuffed into a pork (or synthetic) casing and left to mature.
After a few weeks you can already enjoy a delicious soft ciauscolo and over time you will get a drier cut
