The chickpeas dry legume typical of the Marche, are grown in the Apennines, at high altitude far from contamination, with the traditional method, exclusively by hand without adding any chemical product.
The "Monte Gemmo" Chickpeas are very small, round and smooth and remain tender and tasty when cooked. Their skin during cooking remains intact, an important quality for aesthetic purposes for the composition of the dishes.
They lend themselves to the preparation of tasty soups or for tasty purees to combine with stewed meat.
In the Marche it is used to cook them together with garlic, laurel and tomato, adding almost complete extra-virgin olive oil and a little salt.
Cooking times and methods: Soak for 14 hours before cooking. Cook for about 90 minutes in a saucepan with six parts of water and one of chickpeas on a low heat.
