The harvest period is from January to March.
It has a pleasant flavor, not very pronounced, tending towards garlic. It is found in winter until the beginning of spring (in the month of March there is the maximum production).
The bianchetto truffle originally has the same characteristics as the tuber magnatum pico, irregular, smooth and off-white in color but when it reaches maturity it becomes darker.
Less fragrant than the precious white and generally smaller in size, it has a gleba marbled with whitish and white-reddish veins on a brown-purplish or reddish-brown background.
The surface is smooth, also whitish or light brown yellow. It grows in calcareous soils, often in deciduous and coniferous woods.
The bianchetto must be consumed mainly raw, because cooking makes it toweling.
