Rice flour contains a high content of starch (more than 75%) and few proteins, vitamins and fibers, mineral salts (iron, calcium, phosphorus, sodium, zinc and potassium).
The vitamins contained are the main ones: B6, B3, B2, B1 and E.
Fiber, mineral salts and vitamins are significantly reduced with refining, which is why wholemeal flour is more nutritious and healthy.
